Avocado & Eggs #whole30 breakfast

I have made a commitment to myself to do the Whole30 program.  It’s basically eating whole foods like meats, fruits and vegetables while avoiding all grains, dairy and additives like sugar.  I have read the book, signed up for their newsletter and am now going to try and blog my way through this program.

First, I’m really glad my local HEB has sugar-free bacon.  I used Pederson’s No Sugar Hickory Smoked Bacon which does also sell on Amazon if it’s not in your local grocery store.  It’s compliant with the #whole30 and tastes really good.  I am able to get pastured eggs from the local to Austin and well-known Vital Farms at my HEB as well.  I got my ghee at Trader Joe’s but it’s not organic so I will consider making my own in the future.  It’s not hard to do.   I had my coffee with SoDelicious Coconut milk — which was okay but not as delicious and cream.  I’m going to try real coconut cream when this half gallon is gone.

I’m trying to make this as easy for myself as possible so here is what I’m planning for breakfast most of this week.  Next week I’ll try for a frittata I can eat over multiple days and only have to warm up.

First thing I did way fry up the bacon until crispy.  While the bacon was cooking I cut up my avocado.  I removed the bacon to a paper towel and put all but two table spoons of the grease in my White Stoneware Grease Keeper.  This is a great way to save your bacon renderings for future cooking.  It has a little built in filter and looks neat and tidy on the counter top.

Next, I like my eggs over medium which means all the egg white cooked (runny egg whites are the worst!) but the yolk has to be runny.  This is the best way to eat an egg and the creaminess of the yolk gives you the cheese-like taste and texture you might be missing on the whole30 dairy-free adventure.

Add the crispy bacon to the egg whites before I flipped them over and salt and pepper according to taste.

Add the avocado to the pan if you like yours warm or simply serve it over the omelet at the end.  Cover with homemade salsa and viola a quick and easy #whole30 compliant breakfast without much mess.
