Breakfast for Lunch – Healthy School Lunches

Mornings are a usually a rush around my house.  On the mornings where I am together enough to make bacon and eggs I love to use leftovers to complete a lunch.   This lunch took just minutes to throw together using the breakfast stuff I had on hand.  I try and keep hard boiled eggs in the fridge every week for quick lunches like this.  I also always double my batch of pancakes so I’ll have leftovers for easy breakfast, snack or lunches.

 

Lunch

 

This is what I packed today:

  • Hard Boiled Cage Free (Vital Farms) Hard Boiled Egg
  • Nitrate Free Bacon
  • Whole wheat mini bagel with strawberry cream cheese
  • Fresh Organic Blueberries and Clementines
  • Plain Yogurt (Horizion) sweetened with maple syrup
  • Trader Joe’s Yogurt Star Cookies
